New taste professionals: Catering training in secondary schools in Northern Ghana (PhD project)

It seems safe to say, that everyone eats and hence is a master of his own taste. However,  intersubjective narratives on food are something rare to come across, as my heretofore fieldwork on taste in Northern Ghana revealed. Inspired by works of food writers and existing research on sommeliers and cheese makers, I decided to search for similar „food and taste” professionals in Ghana. As I soon found out, majority of them completed what is called a „catering program”, equipping them with much more than just cooking skills. Despite its general esteem, catering courses in Northern Ghana are burdened with many prejudices and difficulties. They require perseverance, ingenuity and financial input. Gender issued come to play as many boys who want to attend the course, drop out after prolonged bullying coming from their peers, mocking them for doing „a woman’s job”. Additionally, northern Ghana is only becoming a market for professional catering service (at funerals, weddings, naming ceremonies) due to many economical and sociocultural factors. However challenging this path of career can be, those who follow it provide and insightful perspective on the changing plates and palates in northern Ghana.
